Only ship freshly baked cookies but make sure to pack them after they have completely cooled. Packing them while still warm will generate moisture which can turn the cookies soggy or become breeding grounds for molds and other microorganisms. Also wait for the royal icing to dry up completely before wrapping or packing the cookies to prevent messing up the designs.

Sugar cookies can get stale or harden like a rock if left exposed to the air.
